As Breast Cancer Awareness Month draws to a close, the reminder that one in eight women in the United States will be diagnosed with breast cancer during her lifetime remains as important as ever. For survivors, the journey toward wellness continues long after treatment ends, often bringing new questions about nutrition, healthy living and how to embrace the next chapter.

For Ellyn Caruso, an author, culinary-curious breast cancer thriver and founder of the award-winning Chicago public relations firm CarusoPR, food has become an opportunity to nourish both body and spirit. Her cookbook, Forkfuls of Flavor, features more than 90 Mediterranean-inspired recipes designed to make healthy eating an enjoyable, flavorful part of everyday life with healthy eating after cancer. Rather than presenting nutrition as a list of restrictions or a collection of rules to follow, Caruso encourages readers to discover the pleasure of preparing flavorful, nourishing meals that can become a sustainable part of everyday life.

Research suggests that diet quality may play a meaningful role in survivorship. A 2022 systematic review and meta-analysis involving 27,346 breast cancer survivors found that better food quality after diagnosis was associated with a 21% lower risk of death from all causes. Although this finding demonstrates an association rather than proof that a particular diet prevents death, it underscores the importance of continued research into nutrition and health after a breast cancer diagnosis.

The author pointed out two of her favorite recipes: Toasted orzo and parchment baked Mediterranean halibut.

“I like the toasted orzo with spinach because it is so versatile works great a robust meal, as a side, even served cold as a salad and you can easily add a lean protein seafood or chicken to make it more robust entrée.

I like the elegant presentation of the parchment baked Mediterranean-style halibut, it keeps the fish moist and flavorful. I often receive wows when I serve it as each person opens their own parchment packet to reveal the nutrient-dense entree that is fast and easy to prepare," Ellyn Caruso said.

These are two of my favorites because both are fast, easy, and filled with antioxidants, lean high quality protein and flavor,” she added.

The book also reflects a broader understanding of wellness after cancer. Recovery is about more than medical appointments and test results; it can also involve rediscovering everyday pleasures, building mindful routines and finding new ways to connect with family and friends. Preparing a satisfying meal, experimenting with ingredients or gathering loved ones around the table can help make those moments part of a meaningful next chapter.
